I have collected a variety of bottles of molasses - cane sugar, sorghum, date, pomegranate, fig, palm molasses ... - which I have picked up for a specific recipe or two. I'd like to find a cookbook that provides a variety of uses and guides one in choosing an appropriate molasses for a recipe. All I am finding are promotional pamphlets or vanity press publications. Can you help?

This probably won't help, but the fig and date versions are more often called syrups. Both are used in mediterranean cooking. Pomegranate is, as well.

Perhaps widening your search with the term syrup would give useful results.
