Sorry for this late request but can someone recommend super kale salad?  I like to make it for dinner tonight.  Very possible I may not have the same books/mags but it may point me to the right direction.  I've not had kale salad yet.

I haven't had kale salad either, but I have Kale and quinoa salad with ricotta salata from Smitten Kitchen by Deb Perelman bookmarked based on someone's note. It's an online recipe. Sorry, for some reason, the link option did not show up when I highlighted the title.

It may be too late for dinner tonight depending on your time zone, but my favorite is Heidi Swanson's from Super Natural Every Day- simply called kale salad it is kale pieces tossed with sesame oil and shoyu, roasted along with unsweetened coconut flakes (the wide ones). She rounds it out as a vegetarian side/entree with farro. I have varied the oil, tossed in crumbled cheese or dried cranberries, changed or omitted the grain...it is very adaptable. It may also be on her blog 101 Cookbooks.

Thank you for the replies - I'll take good look at both recipes.  I decided to postpone the kale salad until Sunday night so I have today to check out.  Maybe a little strange, but I'm serving this as a first course for chirashi-don (different sashimi and veggies over rice).

I never liked the bitter taste of kale until a friend brought over a Kale Caesar salad a few weeks ago that she bought at a local natural grocery deli. I was converted to Kale on the spot! I just did a quick search for Kale Caesar Salad on EYB and found several that looked good.

Friends taught us to gently 'massage' the kale leaves for a few minutes after chopping and before mixing into the salad to reduce the bitterness.  This technique and this recipe were sweet.

Rinshin, I don't know if you have the book, In the Kitchen with a Good Appetite, by Melissa Clark.  If you do, her Raw Tuscan Kale Salad with Chiles and Pecorino is fantastic.

We ended up making this last night and it was excellent.  I don't have the book (just bought through amazon) but was able to find the recipe online and had my 18 year old nephew who loves to cook make this.  The taste was surprisingly subtle and refreshing.  I can really see this  served with rich foods. 


 


Thank you everyone for excellent recommendations.  I plan on making all different versions at a later time now that I have put my foot into the world of kale salads.

Quite simply the best kale salad ever, people rave about it, and every single person LOVES it. BTW, no one can even tell it has brussel sprouts. I grate them in, and be sure to chop the kale fine. It takes more work, and is just as good the next day. You can use any kale, but lacinato works the best! And it's ever so healthy. Sometimes I cut a step and just use roasted salted almonds.

This too sounds great and somewhat similar to the one we made.  Will try this one too.  Thanks for the recommendation.

I am a huge fan of kale, have eaten it for years in Kale Soup. The best Kale Salad recipe I have found, is on the Simply Recipes website, an adaptation of a Dan Barber Kale Salad with balsamic, pine nuts, cranberrries. Not only is it tasty, but it is colorful with the red cranberries, and the nuts add flavor and crunch. Try it.

Hi Rinshin,


With kale still bursting forth in our garden, I tried a recipe adapted from a local food store, with great results, the best kale salad we've had yet.  It may be like the last one you tried: dressing of 1/3c olive oil, balsamic vinegar to taste (I use about the same as the oil),  1-2 TBSP orange juice, 1-2 tsp honey (so the dressing is sweet), 1 chopped shallot, salt and oregano to taste; salad ingredients: 2 cups chopped kale, 1/2 chopped apple, in slivers, 2 Tbsp dried cranberries, and 1/4 cup almonds, chopped.  You can add a little water to the dressing, or orange juice, depending on  your taste for sweetness.  This is very delicious!


Next step will be finding delicious recipes for frozen greens, once the final fall harvest starts- but we're not ready for that yet!

I have made this so many times, long into spring and long past 'soup weather' because it's so good and versatile- it calls for fresh greens but could be adapted.
