Soy or other Non-Dairy Ice Cream Books?   Go to last post Go to last unread

My husband cannot tolerate dairy milk - with or without lactaid, from a cow, goat, or otherwise.  I've made sorbet at home before, but he's been suggesting that I try making some non-dairy ice cream with soy, almond, or coconut milk.  Does anyone have any books they can particularly recommend?

Most ice cream books contain quite a few recipes without dairy.  The new Perfect Pops book has about 20 of the 50 recipes free of dairy, with some made with soy or coconut milk.  It's not indexed yet though will be soon.  An indexed book is the recent book by Fany Gerson, Paletas, which also has about 20 dairy free ices though more on the sorbet/granitas side than ice creams.


A way to see all the recipes available in cookbooks is to search the EYB Library by Only Show filters - Recipe type; Ice creams & frozen desserts and exclude Ingredient; Dairy (click the green cross to turn it into a red minus).  Not all the recipes you see will actually be dairy-free as small amounts of milk are considered a store-cupboard ingredient.  You get 2,391 results which include a lot of sorbets.  To exclude the sorbets or granitas listed just enter  -sorbet or -granita in the search terms box.


You can also add the word soy (or coconut or almond) to the search terms box and you will see a much smaller number of recipes.  Many of these come from Veganomicon which I don't have so cannot personally recommend.  But vegan cookbooks would be a good source for dairy-free recipes. There are a couple just on frozen desserts called The Vegan Scoop and Vice Cream.  Hopefully someone who owns either can give you the scoop (hah!) on these books.

"The Vegan Scoop" is pretty comprehensive.  There's also "Lick It!".  You can buy them through the site -- just click on Buy This Book and order from the store of your choice!  As Jane pointed out, there are also lots of vegan ice cream recipes in general vegan cookbooks and vegan dessert cookbooks, too!  No need to go without just because you can't have milk or cream!


For making non-dairy ice creams there's a relatively new product in the U.S. called MimicCreme that's made from nuts. It's vegan and pareve.  Great cream substitute (and they even make a version that whips)!  Your market may be able to order it for you, if they don't already carry it.  You can also buy it online.

Jane - thanks for the tips on running that search. That should be pretty helpful. I like to try before I buy, so I put holds on Vice Cream and Lick It from my local library along with a whole host of other vegetarian and vegan books.  FWIW I have Bruce Weinstein's Ultimate Ice Cream Book and have made several sorbets and granitas.  The chocolate one I tried this weekend came out quite well for a sorbet. 


Robm - thanks for the tip on MimiCreme.  I'll have to look into it. I'm only half a mile from Whole Foods, so I'll have to talk to them next time I stop in. 


I read online about a technique today that uses marshmallow and soy creamer to create the ice cream base.  This project should get interesting!
