I did that last year, I can't remember why now, I suspect it was for inventory purposes after a clear out. It only gives you the Title and Author, no page numbers or # of recipes, but it may do the trick for you.
This is what I did:
In EYB book view change to "list view"
Copy all
Paste into a text editor (not Excel or Word, use the simplest editor you have). This strips out all formatting.
Copy stripped data and paste into Excel.
You may have to repeat if you have a lot of books, I know mine goes to two pages in the EYB list view.
Use the Excel sort function to clear out most of the extraneous info, leaving just the titles. With some creative labeling before the initial sort you can also add the authors in a second column to your list if you want. I use the automatic numbering - Sheet> Fill Cells > Series. I use LibreOffice in Linux, so Excel commands may vary.
There may be a more elegant way, but I know this works.
