Does anyone have a recommendation for one or more Korean cookbooks? I have access to a couple of Korean grocery stores, so I can get authentic ingredients.

Try The Korean Kitchen by Copeland Marks.  His books are always carefully written and authentic!  

I have The Korean Table: From Barbecue to Bibimbap 100 Easy-To-Prepare Recipes and Eating Korean: From Barbecue to Kimchi, Recipes from My Home. Both are written by Korean ex-pats living in the US. I have cooked from them both with good success.

My main criticism of The Korean Table is that the recipes require a lot of blended sauces that you have to make in advance; this can be a pain if you don't anticipate this in your prep time and if you're not planning on eating a lot of Korean. Eating Korean has no colour pictures of prep or finished dishes, which I know some people don't like; The Korean table is well-illustrated.

Jean-George Vongerichten's wife, Marja, has just published a Korean cookbook.  I haven't yet looked at a copy, and I don't know her co-author, Judith Turshen, but Jean-George's books are brilliant, so I'm guessing hers will be too.  A family with high standards, I hope.

How do you say "voilà" in Korean?  The book mcvl refers to, The Kimchi Chronicles: Rediscovering Korean Cooking for an American Kitchen, is now indexed on EYB.

I really liked the older version of this book, but now they have revised and expanded it,  A korean mother's cooking notes.

I really also liked Copeland mark's book, and Korean cooking by Judy huhn, and growing up in a korean kitchen by hepinstall.

Also Cooking Korean Food by maangchi. She has her own website with recipes, Cooking Korean food with Maangchi

no cookbook, in paper form but Aeris from  Aeriskitchen has recipes on her site and a kindle version which I have no checked out.
