Pride and Pudding: The History of British Puddings, Sweet and Savoury would seem a good fit.
I'm a big fan of Annie Bell's books and her Gorgeous Desserts has a fool, a syllabub, and 9 trifles.
An Omelette and a Glass of Wine by Elizabeth David is much more than a cookbook being a collection of articles by the great writer. But it does contain 7 fools, 7 syllabubs, and 2 trifles.
Actually there are two editions of Lobscouse and Spotted Dog in the EYB Library.
