It's great reading about these underrated gems.
One author I have consistantly found to be reliable for good recipes is Liana Krissoff. I especially like
Whole Grains for a New Generation and Canning for a New Generation.
Also love Bert Greene's Greens and Grains books.
Finally, a book that helped me learn to cook that I used so much it's falling apart: The Romantic Vegetarian by Judith Sharlin. It's one of those hand-drawn, hand-lettered books a la Mollie Katzen's early ones. But I loved the recipes and her writing when I was a young cook and cooked almost every recipe in there!
