By now I have bought a few cookbooks in ebook form. Including The Art of Jewish Cooking by Jennie Grossinger. But I have not added any to my bookshelf.

I also have e-cookbooks on my wishlists at Amazon, Kobo, and maybe GPB.

I have  few questions: How would e-cookbooks show up on my EYB bookshelf? How would they be accessible? How would recipes from ebooks be accessible?

You add ebooks to your EYB bookshelf in exactly the same way as paper books. Try to use the ebook ISBN code to import, or search for the cookbook in the library and see if the ebook version exists. I have set up a tag for each ebook where I record whether Amazon or other ebook. Sadly there is no link to ge able to access the ebook and recipes from EYB. Not sure if that could ever be possible? Just as for paper cookbooks, EYB will identify the index of recipes - but then you need to open the ebook in its reader to see the full recipe. Hope this helps. 

So no one indexes ebooks?

Generally EYB indexes the print editions then links the eBook to it. So you will see all the same features on your linked eBook as for the print edition as all the data is shared - recipe index, member photos, notes and ratings. There are 3,765 eBooks in the EYB Library that are linked to indexed print books. If anyone owns an eBook that they think should be linked, please email us and we will do that.

If a book was only available as an eBook then it is possible that EYB would index it but it is unlikely to be owned by enough members to be high up on our indexing chart. We did index Isolation Baking by Jamie Schler which is a free eBook on EYB. 

In terms of managing your collection, we suggest members add the eBook (or print book) to their Bookshelf then add a Bookmark with the name eBook or Kidndle. Then when looking for recipes you can use that filter to just look in your digital books.

DH31 - I think the only way we would ever be able to link the EYB index into Kindle recipes is if Amazon bought EYB and integrated the two systems.

Why can't the ebook be linked to the print book, the way different editions of the print book are linked, especially if the print book is indexed?

I have the Kindle version of Mandalay by MiMi Aye, which to my intense annoyance does not include an index; thi sis apparently Bloomsbury policy for eBooks.  So the EYB index for this title is for the print edition; as it contians identical reipes, I find searching the index on EYB very handy

But what about ebooks that are not Kindle - would they be accessible the way a print book indexed in another print edition is accessible?

bittrette - any eBook can be linked to an indexed print book but because our book data is imported from Amazon, only Kindles can be added to the Library using Import Books. We suggests for members with a Nook, Kobo, etc eBook that they add the print edition to their Bookshelf and add a Bookmark eBook then when searching recipes they can limit the search to just their eBooks. TBH, there isn't any particular reason to have the eBook edition on your Bookshelf.

I'm not sure what you mean by "are the problems with Kindle books unique to Amazon?". If you mean can EYB link from our index to other eBooks then no, that is not possible. The only digital books we can link to are the EYBDigital books (which members didn't seem interested in when we launched it a couple of years ago so we have dropped the feature), with the exception of EYBDigital Preview recipes, which also are linked to from our index.

I've indexed eBooks!

Many of our professional indexers also index FROM eBooks but the book that shows as indexed on the site will always be the print book, as that is the edition that is always on the most Bookshelves (by a long way).

So far, I have no Kindle cookbooks; all but one of my e-cookbooks are Kobo books and the one exception is a GPB book.
