Kitchen aid gourmet pasta attachment   Go to last post Go to last unread

I'm looking for feedback from any member who owns the gourmet pasta attachment for a Kitchen Aid stand mixer (ie the one that will make shapes like rigatoni, fusilli etc).  I already own a wonderful stand alone Atlas Marcato pasta machine to roll pasta sheets (with additional rollers cutting thinner ribbons) but we thought that making the other shapes  might be fun .  I've read so many polar opposite reviews online so I decided to come to a trusted source (EYB of course) to see what members thought.

I bought this attachment last year and have had some success with it.  I only make gluten-free pasta and it's a bit tricky to get the pasta dough stiff enough to hold the shapes well, but it can be done.  It's quite satisfying to use, but it's a right pain to clean afterwards!  Must admit I don't use it often because of the cleaning and I probably wouldn't have bought it had I thought that through more carefully.  I tend to use the attachment that I have for rolling pasta sheets and cutting them into linguine more often as this is far easier to use and clean - that attachment is far better than my old Imperial hand-cranked pasta machine and was well worth the money.  Hope that helps!

I too have both pasta attachments for the Kitchen Aid ( the one that is th e roller and the one you are referring to}  I second the previous comment.  The attachment is quite fun to use but a pain to clean.  I have to admit I have only used it once.  Even without gluten free dough it is tricky to get the right dough consistency I have tried a few different dough recipes.

Thanks for the responses....they echo what many buyers online said re: cleaning..which may be the deal breaker for me also.

My son asked for the extruder for his birthday last year. There are two available - one much easier to clean than the other. Admittedly, he wanted it as much to expand his 4 year old son's pasta skills as for himself; and he worked for Pasta and Company for several years. But he loves it and uses it regularly.

Interesting....the only option I see online is the "gourmet pasta press with 6 interchangeable plates".  Other than rollers/cutters (which I don't need), I don't see another option - can you direct me?

KitchenAid KPEXTA Stand-Mixer Pasta-Extruder Attachment With 6 Plates and Housing appears to be discontinued. This is the one I gave my son. There was a cheaper version without the housing that would have been hellacious to clean.


KitchenAid 5KSMPEXTA Gourmet Pasta Press with Six Plates (Optional Accessory for KitchenAid Stand Mixers) appears to be the currently available version

Thanks for the info....a fairly exhaustive internet search suggests my only choice is the newer gourmet attachment & I have pretty much concluded that it won't earn a spot in my kitchen (and I do already love my Atlas Marcato roller /cutter - mine has both hand crank and electric motor options).   Thanks to everyone for the input - it echoes much of what I read online about problems with dough consistency & the issues with cleaning.
