I'm trying to reproduce a bar cookie my Whole Foods in California sometimes has as part of their bakery "cookies by the pound". The cookie is essentially a cake pop as a layered bar cookie. Unfortunately I don't remember what it is called, and I can't find a photo online that shows it. And of course, now that I've decided I want to reproduce this cookie, they aren't currently making it for me to do more research.
The cookie is in two layers: a base layer of funfetti cake pop, topped by an equal-sized layer of lemon/lime filling. The bar is then covered in white chocolate and a light sprinkling of funfetti sprinkles.
The cake pop layer is easy enough. The problem is, I'm not sure where to start on the lemon filling. Flavor-wise the filling layer was bright and sharp and not overly sweet (already covered by the cake pop layer). Consistency-wise the filling layer was definitely thicker than a lemon curd: somewhere between fudge and icing; dense enough to hold bite marks; and pale in color (color isn't important to me, but I thought it might offer a clue).
Any guidance our experienced confectioners can provide for me in attempting to make the filling would be greatly appreciated.
