Salt pork is listed as an ingredient in an Elizabeth David beef stew recipe. What is a suitable substitute? Is salt pork smoked? Thanks.

I've successfully substituted ordinary pork belly for salt pork, which can be smoked or unsmoked. If you wanted salt pork you could make your own - just brine in a salt/water solution for 24 hours .. 1 litre water 100 g sugar, 100 g salt. It's a texture & flavour issue really. Salt pork is available from many good butchers.
