I recently got a KitchenAid vegetable sheet cutter and have exactly one recipe that makes use of it. Does anyone have suggestions on what I can make using this puppy? Thanks!

A variation of Ratatouille… perfectly layered veggie lasagna… lighter, refreshing tacos (jicama makes great shells)…
