  • Potato and Christmas ham rösti

      Pretty good use of leftover ham. Cut cayenne to 1 teaspoon but still rather hot. Made depressions in rosti and cracked jumbo eggs into them, as I do for hash, and cooked it, eggs and all, in oven in oven 15 minutes; eggs a bit overdone, not much. Made in 10 inch cast iron pan.
