    Cookie-Cutter Vanilla Cookies: because I'm stubborn I repeated the recipe with recommended change down to 1/2 cup water. Worked perfectly this time. End result tasted "a million times better" (DH). I thought they were good - the vanilla wasn't strong. They are really quite a neutral flavour with a hint of chickpea and just the right amount of salt. They kept their shape nicely. My only critique was a slightly dry mouthfeel but overall a very pleasant biscuit (DH said he detected very slight "grittiness"). I halved the recipe amount and still got 9 extra biscuits. Same substitutions as before. Baked exactly 15 mins at 160c, could have come out a fraction sooner.

    Cookie-Cutter Vanilla Cookies These were not a success. I have a feeling the chia seeds may not have absorbed as much water as they were supposed to? I did replace Sucanat with light brown sugar. I also used Doves Farm rice flour which is a mix of white and brown flour instead of just brown rice flour (I ran out). The dough was extremely wet and sticky and I needed to add a lot of flour to get it to a rollable consistency. The end result had a not-very-pleasant flavour from the chickpea flour and a slightly crumbly consistency. I also ended up having far too many (I originally halved the recipe because I only wanted a few). They were slightly better after being iced. DH liked the addition of chia seeds but didn’t like overall. M1 liked them.
