      Of all the cookbooks on my shelf this is my favourite. Many many recipes, simple but work.

      Easy and delicious once you’ve made the paste. Make it quite moist to help when it comes to frying. I used lamb shoulder and cooked for 2 ½ hours in the oven on 130 deg C fan

      Second attempt- I didn’t cook the aubergine as long in the oven so there was more texture but the flavour wasn’t as good. I prefer the previous version, when the aubergine was *really* well-cooked under the grill.
