    Made the Egyptian Falafel from El Masry. HORRIBLE. Fava bean base was the consistency of toothpaste & never firmed up. No flavor, the fava beans overpowered the seasonings and the patties smelled a lot like the water from canned black beans. I do not think the submitted recipes were tested before the cookbook was printed. I used Mideast brand ful mudammas.

      We made half a recipe. We both thought it was great. One note: It didn't call for any salt. John added some, just to taste. There was an optional ingredient (not listed here, and we didn't use it; it may have added saltiness...I have no idea).
