    Strata (pg 232) - while I had seen many recipes, I had eaten strata only once before I tried this recipe. I have no idea if what I cook up with this recipe has anything to do with an "authentic" strata but this does make a great way to use up odds and ends and leftovers. For that reason, I recommend this recipe.

    Pounded steak Louisiana-style (pg. 171) Yes, I grew up on a cattle ranch eating excellent meat -- cubed steaks were homemade with a meat tenderizer (hammer style) and a round steak. I could pound meat long before I was tall enough to use the stove top. (I probably didn't notice Mother completing the job.) So I love cubed steaks and was delighted to find a recipe that isn't some variation on chicken-fried steak. Cooking a cubed steak with tomatoes, bell pepper, onion, thyme, and Worcestershire sauce and pouring it over a grain base is a very simple and satisfying meal. Add a salad and dinner is ready.

    Rock Cornish game hen meal-in-one (pg.146). The first time I had Rock Cornish game hen was when my college roommate and I decided a turkey for Thanksgiving for four was ridiculous. I fell in love with it. I love this recipe for roasting veggies with the hen to make a complete meal. I the variations showing you ways to modify the recipe to match the season and your mood. This is a definite keeper of a recipe.
