  • Gooseberry & ginger crumble

      I changed the recipe slightly, 300 gr gooseberries, 1tsp cornflour, 2 finely sliced cubes stem ginger, NO liquid, baked for 12 mins at 150c. Left that to cool while I made the crumble topping (halved the ingredients) and then baked the whole thing for 25 mins @ 190c. Served with custard. The ginger really added a lovely zing to the gooseberries.

      Ground almonds don't work in a crumble topping! It clumped together and I couldn't spread it out properly. The plum element wasn't spectacular either. Not worth repeating in my opinion although Mr P liked it.

  • Cranberry & apple cobbler

      Did a crumble top with walnuts. Fruit mixture was good but needs a good amount of sugar, say 75gr (ommission in recipe). I added dsp cornflour to fruit along with juice from the orange and baked for 20 mins, then cooled before adding topping and baking for 30 mins. Very nice winter pud with the tang of cranberry.

      This is so good in so many ways. Firstly, it can be easily adapted to be gluten and dairy free and unusually for a batter type pudding it doesn't contain eggs, so several of my intolerances dealt with! Secondly, we loved the crispy edges and the flavour combination....pears and oranges - not one I'd have thought of. Finally, it's really easy to prepare and you could swap the fruits (cherries, plums, apples, peaches} according to the seasons. 28/10/24 used apples from Sandringham, excellent.

  • Brioche pudding with blackberries

      Very light pudding, Halved the ingredients which was sufficient for 3 servings. Baked for 30 mins. Brambles were quite sharp although rest of pud was sweet enough. Would also be good with raspberries.
