      The large bunch of coriander I thought I had in the fridge was actually parsley, so there was a bit of a gap in the flavour profile (and in the UK it's not so easy to get coriander with the root on) but this was still absolutely delicious. I think I used the wrong noodles, because mine didn't puff up, they just burnt, so I used some crispy fried onions as one of the garnishes for texture.
