      Good, and my first time making a Tom Collins. Not very gin forward as it's kind of drowned out by the lime juice and simple syrup, but still good nonetheless

      Use 1 oz orgeat and no simple syrup. Watch the lime because it is 1.25 oz not 1.5 ounce. Increase the OJ to 1.25 and this is a perfect Mai Tai!

      I was intrigued by two bartenders pondering how to make a Vieux Carre. They didn't have Benedictine so they subbed in Green Chatruesse which I would never have thought of. I immediately made it when I got home, it is a Manhatten riff and I enjoyed it. This recipe is half the standard version for some reason.
