  • Lemon-poppy seed pancakes

      The lemon was barely noticeable. I doubled the poppy seeds since I love them. I'd hoped the ricotta would make these light and fluffy, and I think it did lighten them, but the pancakes were more custardy in the center, to the point where they seemed underdone, although I know for sure they were cooked through. We ate them, but I'll try a different recipe next time.
