Publishers Text

Vegetarian cooking has come a long way from the early days, when it was regarded as boring, brown, and beany. Renowned today for its focus on fresh seasonal product, it joins the ranks of innovative delicacies that satisfy the discerning palate—bursting with flavor, color, and appeal. This classic volume features 500 exciting vegetarian recipes for all tastes and occasions. You’ll find the familiar—dairy, pasta, rice, beans and fresh vegetables—along with introductions to less familiar foods such as tempeh, Indian dhals, polenta, exotic vegetables, wild mushrooms and seaweed. It also celebrates international flavors—from satisfying Italian soups and quick Chinese stir-fry to Greek filo pies and spicy Thai curries. Over 550 color illustrations and techniques accompany superbly written instructions to ensure that your Twice-Baked Spinach and your Ratatouille Pancakes and your Pizza Margherita and your Jamaican Black Bean Pot and your fiery Chile Cheese Tortilla with Salsa and your Wild Mushroom Brioche with Orange Butter Sauce all come out perfect every time.
