Very tasty! 3-4 cloves garlic makes a reasonable substitute if you don’t have shallots on hand.

Publishers Text

This 96-page triple issue 20th anniversary special edition features the very best Italian recipes, core cooking techniques, and smart shortcuts from the test cooks and editors of Cook's Illustrated magazine and public television's America's Test Kitchen.

These are the recipes that have become our favorites over the years, recipes that taste so good that they are more than worth the expense and effort of making them (instead of just ordering out). They are also unique: we've found a way to eliminate the usual grainy cheese and watery vegetables that plague many vegetable lasagna; we transform fussy risotto into a relatively quick and hands-free dish; and offer a homemade pasta recipe you don't need a machine to make.

We've also included some of our personal blue-ribbon favorites, such as Shrimp Fra Diavolo with Linguine, Chicken Piccata, Pasta with Classic Bolognese Sauce, Ciabatta, and Tiramisu, and side dishes like Saffron Risotto and Sauteed Baby Spinach.

Get our Essential Guide to Cooking Pasta, learn about the different kinds of garlic (we tasted 8 varieties), how to make a calzone and roll manicotti, how meat tenderizers work, and the secrets to making a thicker, more flavorful minestrone soup.

The All-Time Best Italian Recipes special triple issue also includes our picks for supermarket ingredients, tools, and cookware that will ensure you're cooking with the best quality products, including: Supermarket Parmesan cheese, canned diced tomatoes, red pepper flakes, whole-wheat pasta (some brands are very good indeed), paring knives, traditional skillets, garlic presses, charcoal, and parchment paper.

Featured recipes include: Italian-Style Pot Roast (Stracotto), Chicken Piccata Done Right, Penne alla Vodka, Osso Buco, Pasta with Garlic and Oil, Sunday Gravy, Pasta Caprese, Veal Scaloppini, Grilled Tuscan-Style Steak, Parmesan-Crusted Chicken Parmesan, Lighter, Quicker Eggplant Parmesan, Foolproof Fettuccine Alfredo, Chicken Marsala, Fried Calamari, Pasta with Butternut Squash and Sage, Best Quick Tomato Sauce, Better Spaghetti and Meatballs, Italian Grilled Chicken, Parmesan Mashed Potatoes, Italian-Style Broccolini, No-Fuss Cream Polenta, Pasta Fazool, Really Good Bruchetta, Italian Almond Cake, and Smooth and Creamy Gelato.
