  • Courgettes with goat's cheese

      While this was cooking, I wasn't sure about it and thought it would be a miss, but it was actually really nice. It's basically a courgette-tomato sauce and could possibly work well in a baked pasta dish or a gratin type dish. We had it with bread to mop up the juices, and used crumbled feta. I reduced the amount of olive oil from 6 to 4tbs, which was plenty. Lovely - will make again.

  • Elderflower & cucumber spritzer

      This is so refreshing, and a great way to use (home made) elderflower cordial. The blended mixture only needs to be strained if it is intended to be drunk with a straw, as that will get clogged up. Otherwise no need to discard cucumber goodness - but it can also be used in next morning's breakfast smoothie!
