  • Lemony pancakes (a love story)

      I liked the flavour and the texture of these pancakes when I ate one to test first. I did not like them with the suggested maple syrup. The syrup soaked in fast and made those ones soggy and texturally weird so if you like syrup, consider it on the side and dunk as wanted.

  • Spinach-feta quiche (perfect packed lunch)

      After a number of tries, I've tweaked this to (I think) perfection and it's a favorite. Way too much spinach to egg ratio in the recipe. My version: use a deep dish frozen pie crust, 4 eggs, 2 T. fresh dill, 10 oz. frozen spinach, 2 finely chopped green onions, about 2 T. cream or 1/2 & 1/2, 1/2 to 3/4 c. creme fraiche, 2 T. sundried tomatoes, 1/2 t. salt, dash red pepper flakes, 3/4 c. feta. Heat baking sheet in advance while preparing quiche, then place on the hot baking sheet to bake. Cover crust rim, bake 40 min., turn then add parm., then bake 12-15 min. Freeze in large slices; reheats well.

      Good pasta with salmon. I added a tablespoon of heavy cream, to thin the sauce & make it cover the pasta better.

  • Curry-carrot soup

      Basic, easy to make soup. I used Madras curry powder and might try a different one if I make it again. My carrots were getting old so I also ended up adding a tablespoon of maple syrup to cover the less than sweet old carrot.

  • Fennel, arugula, and orange zest salad

      Surprisingly tasty and was a good compliment to rich red wine braised short ribs. I would say it serves two if you have another vegetable with your main.
