    pg182 Zucchini, Carrot and Banana Loaf Both gluten and dairy free -which means that all my family members are catered for! Unable to find any zucchini ( courgette) so I added 2 cups of grated carrot instead of just the one cup. This was a delicious loaf ; served on its own or with a dollop of coconut yoghurt and a squirt of raw honey as a real treat! Tempted to make another loaf now!
