    Fairy cakes - a half batch of this made 4 normal size cupcakes. Took about 18 mins. Added 2 tsp baking powder and 1/4 tsp xanthan gum because only had plain flour. Very neutral tasting - might be a good vehicle for other flavours. I feel as though I've bought GF cupcakes similar to this before - large airholes and slightly springy texture. This was ok but didn't wow me.
