  • Hobo pack chicken fajitas

      5/5/2023 We made this dish for Cinco de Mayo and it was a hit. Easy to make and not a lot of hands-on time. It would be great for a party. We made the recipe pretty much as written with only minor changes. We cut up boneless chicken breasts instead of using tenders. We sliced full-sized bell peppers instead of using the mini ones. The store was out of shishito peppers so we left those out of the recipe. We served the hobo packs with Margaritas, guacamole, and chips along with a variety of salsas and hot sauces.
