  • Beetroot risotto with horseradish and chard

      Had a pack of prepared shredded beetroot to use up and followed this recipe, omitting the white wine and horseradish as didn't have those on hand. Don't think I'll make a beetroot risotto again, didn't really like the taste. Adding a bit of lemon juice and balsamic helped. It was also better with cheese than without. Not a repeat for me.
