    Chickpea and quinoa falafel: I'd chosen this as a 'use up some odds and ends' recipe but it far exceeded my expectations. My husband expressed doubt about liking falafel and I've also found them heavy on the past, but both of us really enjoyed these. They had great flavour and a lovely light-ish texture due to the quinoa. I couldn't be bothered roasting a red pepper so used a jarred one instead and also left out the pistachios. The salad and yogurt sauce set these off beautifully. A definite repeat.
