    Pannukakku Finnish Pancake (pg 82) is another amazing pancake from this book - think Dutch baby or German pancake which is slightly sweetened with honey and a bit of vanilla. This makes a perfect foil for the rhubarb and strawberry compote topped with vanilla creme fraiche. This is exceptionally good.
