      I found the flavor of this bread terrific - complex and tangy. It's just begging for a smear of schmaltz! Don't expect a big loaf or one with a light crumb. It's dense, as it should be in my expectation, but still moist and not at all leaden. I'm tempted to try letting it ferment overnight in the fridge next time.
