      Yum! Used shredded coconut i had rather than buying flaked and it worked just fine! I stirred it a few times while roasting and then also roasted the sweet potatoes halved.

      We enjoyed these tostadas very much. The “cheese” sauce was easy and delicious. Next time, I might make more beets, but overall, I made the recipe as written and it was great. It’s a great canvas for other veggies. I made gluten free tortillas.

      These were just okay; I wouldn’t make them again. The texture was too smooth and they squeezed out of the buns. The poppy seed dressing was nice.
