    Have made the Fudge popsicles multiple times. Tip: sift the cocoa for easier mixing. I make these with Dutch processed cocoa (usually Valrhona) and homemade plain whole milk yogurt instead of the coconut milk. Also, reduce maple syrup to about 2 tbsp or maybe a bit more. Produces a very intense chocolate taste (similar to bittersweet dark chocolate) - yummy.

    Made the creamsicle popsicle last night. Husband enjoyed it but I was hoping for a creamsicle more reminiscent of what I ate as a child. This one was sour and a bit bitter with strong honey notes. Which actually would be interesting if I wasn’t expecting something else. This books takes classic (and unique) flavors but uses healthy ingredients. I guess I was hoping for more dessert style popsicles but if you’re looking for healthy alternatives, this book is it!
