      A great variation on the ‘zucchini/veggie slice’ of my childhood (& probably a lot of other Aussie kids too). The spices raised the flavour profile considerably, but it was still devoured by the 6yo & 2x 1yo. It took 40 mins in my oven to be cooked through.

      A good peasant-style soup. My children liked it too. The recipe did not mention when to add the sour cream - I added it while blending the soup.

      I enjoyed this but my partner wasn't a fan (wanting pure pumpkin soup). This doesn't require much attention and creates a nice flavour layered dish.

      I loved this. Not quite sure why it’s called ‘roast chicken’ as there’s no roasting involved, but using leftover roast chook would work perfectly. I also used the River Cottage method of bulk grilling the eggplant slices under the overhead grill to speed up the preparation.

      There isn't much to this recipe, however the length of time required to cook this dish seems incredibly underestimated - my tomatoes needed two to three times as long in the oven until I thought they were ready!
