      Perfect. I steeped the teabags for a few minutes longer and added a 60ml ginger shot (ginger & apple juice) when I combined the tea and peach syrup, but otherwise as written. Lovely flavour, perfect level of sweetness and tannin.

      I used trout fillets and a handful of prawns instead of whole trout. Very nice - really fragrant. Needed a bit more than the pinch of salt the recipe suggested.
