    Gillardeau oyster with cucumber, lemongrass, and chilli (pg 72) is one of those I-want-to-showcase-my-modern-techniques recipes as a portion of its effectiveness is based on a cucumber foam. The oysters (I used local) are marinated with flavors of lemongrass, oyster sauce, shallot, ginger, chilli, corriander, lime ... but served uncooked. Very, very good.

    'Gado gado' beans (pg 98) is a great Balinese inspired green beans dressed in peanut sauce. This is one of the better renditions of East Indies' peanut sauces I've made. A recipe that I would use for family gatherings -- except that a niece has a peanut allergy.

    Pissaladiere (pg. 112) is an "onion jam" pizza with a puff pastry base and topped with olive tapenade, anchovy fillets, and Greek basil - a very enjoyable snack or lunch.
