    Oyster Mushrooms pg. 61. This is a very simple recipe -sauteed mushrooms with sea salt mixed with Kampot pepper and limes for a condiment style seasoning. But it is addictive.

    Cha Knhei Sach Moan (Chicken with Ginger) pg. 148 - garlic, ginger, onion, palm sugar, oyster sauce, soy sauce ... I used deboned thigh and breast rather than a free-range chicken as the latter would have required breaking social distancing. A very well balanced dish.

    Banh Chaev pg.174 can roughly be considered as a spring roll using a crepe - a rice flour, coconut cream and turmeric crepe. The crepe is very nice especially when one gets it thin enough to be crispy. The filling calls for lettuce, basil, mint, cucumber, and komplou leaves. Yes, the last ingredient threw me as I am not familiar with it, at least under that name. I could not find a flavor profile so I took a shot in the dark and used arugula. The sweet-and-sour dipping sauce with peanuts produces a solid but not spectacular sauce. The crepes make this recipe well worth repeating and trying other fillings.
