Notes about Recipes in this book

  • Coconut and hazelnut sandwich cookies

    • Foodycat on January 13, 2022

The recipe says it makes 8 sandwich cookies with 1/2 tbs of mixture. Mine made 20 using whole tablespoons of mixture. The cookies are a nice, crunchy, ANZAC-y biscuit on their own, although I think if I make them again I will add some ginger or cinnamon because they are a little plain. Instead of mascarpone and double cream I used up some odds and ends of Philadelphia and clotted cream in about the same proportions. It made a LOT of filling so I was glad I had so many biscuits for sandwiching it.
