      So yummy, used store bought mozzarella. Loved Kalamata olives in this. Used mixed greens - didn’t love that they had more spinach than I prefer - but this was delish! Had a hard time choosing how much farro to make 1 1/2 times was def not enough. 2 heads of cauliflower and double the sauce was plenty!

      Missed some gravy! Used an instantpot mashed potato recipe that was not good enough, but worked. Mostly just steamed kale, did saute a little with a little salt and Aleppo pepper. Tofu worked pretty well, made a bunch.

      This is great! And it inspired me to prep other things like sweet potato and lentils while I was in the kitchen. Didn’t have edamame so I prepped some baked tempeh to go with!

      The curry is too simple for my taste, but the tofu was fun (light sprinkle of salt helps it), and as a meal I think it will be decent. Did get raves for tofu and it’s so simple, must make that again.

      This was so good! My black beans could have used a minute longer, they didn’t smush very well. So simple, so delicious!

      I thought it could use a tiny bit more liquid in the dumpling mix, but otherwise, this was easier than it looked and delicious
