      The cornflour on the chicken made it really crunchy and the sauces caramelised over it was super yummy

      I love sardines so this dish jumped out at me, and we really enjoyed it. The stuffing makes way more than you need, but there is no downside to having the extra stashed in the freezer. I used butterflied sardines which were headless and tailless, no impact on flavour but not as attractive as the magazine shot.

      It’s a bit unfair to rate this dish because I took so many liberties, including using 1/2 a bbq chicken instead of coconut poaching. The big winner here is the dressing, it is outstanding!
