    2/3/25 - Chairlift Chickpea Salad - good and straightforward. I think next time I’ll replace the mayonnaise with olive oil. Would be far better with fresh dill instead of dried. I made it a bit Mediterranean by adding chopped cucumber, tomatoes, and mint. Needed extra acid at the end. A great salad to prep for lunch for a few days!

    2/3/25 - French Onion Meatballs - Pleased with how tasty this recipe turned out. Basically a French onion soup with meatballs. For more a deeper French onion flavor, you could reduce the beef stock ahead so it is more concentrated, or add some umami ingredients like fish sauce or Worcestershire. Good quality Gruyère on top really finishes the dish well! Used turkey instead of chicken, and deglazed the pan with dry sherry after the caramelizing onions stage.
