      I didn't love this recipe. It was boring and uninspired. After spending all the time to cook the black beans, it was a complete waste of time. It's my fault for picking this recipe out despite it sounding very plain. The zucchini boats definitely needs something else in the filling besides just beans.

      Nice vegetarian dinner. The sauce tasted great and had a nice level of spiciness from the chili garlic sauce. I used a vegan "fish sauce" to keep the recipe vegetarian and I thought it worked well. I would make this again.

      Delicious! The crispy, smashed potatoes paired well with the tzatziki sauce. I liked the cauliflower rice as a replacement for grains in the tabbouleh. I did increase the amount of lemon juice. I would make this again.
