Good fusion recipe cookbook, with Indian twists on recipes from other cuisines (Italian, Spanish, American Comfort, Mexican, Middle Eastern, etc.). Creative recipes like Spice-Rubbed Cauliflower Steaks with Pistachio & Cilantro Gremolata, Bucatini a la Pumpkin with Pink Peppercorn & Pistachio, Indian Stuffed Mushrooms, Creamy Grits with Roasted Tomato Jam, Cornbread Gulab Jamun, Tofu 65, Toasted Coconut Chili Peanuts, Mango Gazpacho, Poblano Torta, Patatas Karras (Bravas made w/ tomato chutney), Watermelon Rose Salad, Chocolate Cardamom Macadamia Butter, Falafel-Pear Lettuce Wraps, Saffron Lassi and Creamy Mango-Coconut Froze. They can be time consuming, though; 15 ingredients isn't unusual. Also there are only 55 recipes. But I still loved them and am glad to own it. Get the print edition--based on the preview it's much prettier than the e-book, which only has small photos. 4 stars.

I love sweet potatoes & I love peanuts so I knew I’d enjoy this. Used some peppers from our garden. Great with the cucumber-carrot raita as suggested! Doubled the recipe because we like food & leftovers. Added some quinoa as well to make a more filling meal. Next time i would love to make the shaboodani!

  • Cucumber-carrot raita

Good & very quick and easy to make! I am not vegan. When I saw “coconut yogurt” I purchased Two Good’s coconut flavored yogurt. But now looking at the ingredients on EYB, maybe it was supposed to be plain yogurt? Either way, it was delicious!

  • Bucatini à la pumpkin with pink peppercorn & pistachio

Nice little dish. I enjoyed the bit of kick the sauce had to it!

Champion the diversity and versatility of vegan cooking with these delicious, unique recipes sure to break the mold.

For as long as veganism has been in the mainstream media, there have been many misconceptions about vegan cooking—that it’s not portable, diverse, versatile, or tasty. But that’s simply not the case. With such appealing and intriguing recipes, Chef Priyanka upends some of the long-held vegan assumptions with The Modern Tiffin.

This book goes far beyond expectations of the standard Western meal: meat, potatoes, and vegetables. Vegetables can indeed be the star of the dish, rather than merely a forgotten side dish. Including an array of fifty-five vegan recipes, such as the Italian Tiffin, which uses chickpeas and garam masala to create a new bruschetta, or the American Comfort Tiffin, which includes a Southern riff on a traditional Indian dessert Gulab Jamun, The Modern Tiffin shares this versatility through delicious vegetable-focused recipes tying back to Priyanka’s childhood, travels to nearly forty countries, and life as a first-generation, Indian-American in New York City.
