  • Upside-down apricot cake with Amaretto mascarpone cream

      This was delicious despite me badly under-baking the cake. I had misread the temp (didn't notice it was fan and my temp should have been 20 degrees higher). Once I realized (near the end when I was worried how liquid it looked) I upped the temp and added 10 minutes but it still was very soft in the center (hence no pic). The accompanying cream was really good - made the dessert more special.
