Fall-apart beef short ribs and gravy (pg 104). Okay 1 1/2 pounds of meat ... 1/4 teaspoon each garlic salt and black pepper ... 1/4 teaspoon balsamic vinegar. Okay, I decided this recipe was really, really skimpy on the seasoning ... and it was the mustard-balsamic vinegar-soy sauce sauce that had drawn me to the recipe. I stayed on the light but reasonable measurements and cooked as instructed. The cooking instructions were near perfect. The flavor was a complete failure. Next time I'll pull out a Chinese cookbook for the sauce and use this for the instructions.

Korean sauteed spinach (pg 58) - I used fresh onion rather than dried onion. This recipe uses the Instant Pot essentially as a saute pan. So I proved I mastered another Instant Pot skill on a mediocre recipe - a generic Asian rather than a Korean recipe in my view.
