  • Whopping one-pan potato latke with smoked salmon

      I made this for a guest who loves smoked salmon. It was a little bit faffy doing the potato latke, in terms of flipping it and making sure it was cooked through without burning, but I got there in the end. Overall I thought this dish was nice but not really more than the sum of its parts, and it's not something I'd really make again. I thought that texturally and in terms of flavour, it would have been nicer with a giant potato scone than what was effectively a hash brown, the onions came through a bit too strongly.
