  This recipe makes a LOT of salad, but I loved it. I might skip the poblanos, however, as I'm not sure they added much to the dish.
Turkey meatballs and spaghetti squash

  I didn't really think I needed this recipe. I already make meatballs + spaghetti squash on occasion. But I was wrong, and this recipe is wonderful. Loved the baked meatball technique, loved the HUGE meatballs (one was enough for a meal), and loved the sauteed spaghetti squash. Definitely making this again.
