  • Garlicky greens, black chickpeas and soy dressing

Way too much soy sauce. Cut in half. Don't bother blanching the spring greens. It's also a really fiddly recipe. In trying to keep everything in one pan, you will end up using way too many bowls. Also some things need a pasta pan or a small sauce pan or a cast iron skillet - silly to try to do them all in one pan. Takes longer as well - could have finished this much more quickly using multiple pans.

What a pfaff!! I ended up using greens that I could together in the same pan. I couldn’t find black chickpeas so I used regular ones, they were delicious but not as pretty as YO’s picture. The end product is yum but probably won’t repeat.

  • Aubergines with lime yoghurt and spicy chilli oil

An eggplant dish that my eggplant adverse beloved enjoys is a rarity, and he loved this one. It’s a perfect balance between the chilli sauce, eggplants and yogurt. I halved the recipe for the 2 of us but did the full amount of chilli and I’m glad I did it’s so good.
