This is a book for people with more imagination than money. The methods are simple, and the materials too, but the recipes are fresh and exciting, bringing a sense of adventure into the kitchen. Given the creative urge, the simplest of materials can yield an infinite variety of dishes, and the Finns, restricted by nature in their choice of home-grown foods, have used their traditional ingenuity to make them interesting.
